This pie is full of fruit, pudding, graham cracker crust, and it’s low-cal, no-bake, and perfect for summer!

Pie?
What?
How is it possible that all four of these things can fit into one sentence? I’ll tell you how. With a super-duper yummy recipe from Weight Watchers, (which is an online service that I’m subscribed to, probably for life) and it couldn’t be EASIER.
You can have this pie at room temperature, but I’m really recommending you freeze it so you can enjoy perfect slices like the one above ^. How long you wait to let it thaw before you eat it though is up to you. I literally ate it right out of the freezer (well, after I took pictures of it of course) and along with some sugar-free cool whip, it was a perfect cool-down treat for a hotter than hot day.
My husband’s slice didn’t last any more than 30 seconds on his plate either, so I’m thinking frozen is really the best choice 😉
You know what this mean? You can have a frozen, no-bake pie means that’s as close as you can get to ice cream, without having to use your oven which heats up your house- and who wants that in the summer?
Seriously, here in Omaha…it is only June and we are already pushing 100ºF!
…. YUCK.
I digress….
On to the recipe!
Prep Time: 20 minutes
Cooling Time: 30 minutes
Total: About an hour
You will need:
Large spoon or rubber scraper
Medium mixing bowl
Paring knife
Food processor or blender
Freezer
Foil or seran wrap
Pie server
Ingredients:
1 pre-made graham cracker pie crust
2 boxes of instant pudding mix (although you may only use about 1 and 2/3 boxes)
You can use fat free, sugar free, low fat, and any flavor, although I used sugar free vanilla.
2 cups of fat free milk
2 peaches, sliced
2 bananas, sliced
1/4 teaspoon nutmeg
Fat free OR sugar free Cool Whip for garnish
Directions:
*Using your medium bowl, prepare the instant pudding according to the directions.
*Stir in nutmeg and set aside.
*Using your blender, toss in 1 sliced peach and 1 sliced banana. Purée until smooth.
*Lay slices of banana in the bed of the pie shell.
*Pour the pudding mixture over the bananas. Make sure it doesn’t overflow! You will probably have leftover pudding!
*Put pie in the freezer for about 15 minutes to firm up.
*Remove pie from freezer and place sliced peaches in whatever arrangement you’d like.
(If you do not freeze the pie first, at least a little bit, the peaches will likely sink into the pudding!)
*Place seran wrap over pie and freeze for the remaining time of 15-20 minutes.
*Remove pie from freezer a final time and slice, add whip, and enjoy with friends!
At first I wasn’t sure about this recipe because of how simple it was –I always like a challenge–but it was a nice change of pace, especially when I wanted a cool dessert, and quick!
Needless to say, it didn’t last long in the house ! 🙂
