Today is Valentine’s day, and what better way to share breakfast in bed with your sweetheart than by serving them dessert! Well, these waffles are practically worthy of being labelled as dessert because of how filling and chocolatey and yummy they are, but I’ll leave that judgement up to you!
I have no problem eating these in the morning, but I have to tell you I could only finish one. Having one later after dinner with ice cream a la mode, however, may be in the cards.
For now, take a moment to feast your eyes, and if you own a waffle maker, iron away my friends!
You will need:
A waffle iron
Two mixing bowls
A whisk or wooden spoon
A spatula
A plate
Oven Mitts
Ingredients:
- 1/2 cup flour
- 1/2 cup unsweetened cocoa powder
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 10 tablespoons melted unsalted butter
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup water or milk
- 2/3 cups mini chocolate chips
*Optional: Berries, powdered sugar, syrup, nutella, peanut butter, almonds, ice cream etc.
Directions:
Begin by mixing the dry ingredients in a medium bowl.
(flour, cocoa, sugar, powder, salt)
Next, mix the wet ingredients in a separate bowl.
(butter, eggs, vanilla, milk/water,)
*Be sure to let melted butter cool a few minutes before mixing with other ingredients
Pour the wet ingredients into the dry ingredients and mix until just combined. Add the chocolate chips last. The batter will be very thick (like brownie batter!)
Preheat and coat a waffle iron with cooking spray.
Very carefully use a spoon to put about a quarter to a third of the mixture into waffle iron and close the lid. Cook for about 3 minutes or longer, until waffle is set. While it is hot, it may be difficult to remove from the iron intact. I had to get creative with a spatula/flipping the iron upside down into a plate. I suggest using oven mitts while doing this because the potential to burn your fingers is high. (I totally did- ouch!)
Note: When the waffle is still in the iron, it will be soft. When removed and cooling on the plate it will firm/crisp up like a brownie. Be prepared for the change in texture!
Top with your favorite additives and indulge! A nice bold cup of Pike’s Place Coffee from Starbucks went really nicely with mine. Oh, and you should yield about 3-4 waffles so you’ll want to share with a loved one of course! Your brownie points (pun intended) will definitely go up with this delightful treat!
