Oh boy oh boy. This recipe really impressed even myself, and my husband, as it didn’t stick around in our house for too long. I kept swatting away hands from eating this tasty granola before I was able to shoot pictures of it. Food bloggers know the struggle is real.
But seriously, I cannot get over how EASY, FAST, and TASTY this turned out to be. Add a splash of almond milk in a bowl and you’ve got yourself a breakfast that leaves Kellogg’s cereals in the dust.
I borrowed this recipe and altered it a bit from this blogger: Meals With Mel.
Ingredients:
1 Cup Raw Almonds, divided
1/2 Cup Pecans, roughly chopped
3 Cups rolled Oats
1/4 Cup Flaxseed
1/3 Cup Brown Sugar, packed
1 Teaspoon Cinnamon
1 teaspoon Nutmeg
3/4 Teaspoon crushed Sea Salt
1/3 Cup Honey
4 Tablespoons Coconut Oil
1/2 Teaspoon almond extract or vanilla
3/4 Cup craisins (dried cranberries)
*Almond milk for cereal 🙂
Directions:
Preheat the oven to 350ºF.
Line cookie sheet with parchment paper.
Add half the almonds to food processor and chop on setting 1, until very fine.
Roughly crush the remaining almonds and pecans in a bag with the flat end of a meat tenderizer. Or use a pestle and mortar, although this may go too far with the texture.
Add all chopped nuts, Oats, Flaxseed, Brown Sugar, spices, and Salt to a large bowl.
In a small bowl add Coconut oil and Honey.
Heat in microwave for 25-ish seconds until melted.
Stir to combine.
Add almond extract to the honey and coconut oil.
Pour into other bowl with the dry ingredients.
Stir the mixture until coated.
Fold in cranberries.
Spread onto parchmented cookie sheet and pop into oven for 10 minutes.
Take sheet out of oven after 10 minutes and turn and stir mixture.
Put back into oven for another 12 minutes until golden brown.
Keep an eye on it as it can be overdone rather quickly.
Pour into bowl and enjoy with your favorite dairy topping. Or additional fruit if you wish!
Another fun and yummy add in could be mini chocolate chips, or roasted coconut flakes!
Store in air tight containers. Ball mason jars make for a pretty picture- hint, hint 😉

Wow, this looks absolutely delicious and it is very healthy with the flax seed. That is good for cholesterol. In the picture of the honey with the white stuff in the bowl, is that the coconut oil? What is the solid? Is coconut oil a solid? Just curious?
I still didn’t make the cookies yet, but I did make a packaged box of banana bread. It is good, but I know it would be healthier if it was homemade. I can’t hold onto bananas that long as I hate squishy bananas, so I guess my banana bread will never be homemade.
